The water you boil beets in will take on a red hue and can be used to dye animal-based fabrics like wool and silk. If you want a darker hue than the light pink you end up with after blanching beets, try chopping up a few beets and boiling them for an hour. You'll end up with dye that can be used to create deep reds and purples. To dye the fabric, strain out the beets, add the fabric and let the contents of the pot simmer for up to an hour. Rinse the fabric in cool water with a tablespoon or two of vinegar added to help set the dye.

Drying is complete once the beets feel leathery to the touch. Break a couple of the strips open to make sure they're dry all the way through. Store them in a cool, dark place for up to a year. Beets dried in this manner will need to be soaked in cool water for up to an hour to reconstitute them. They can be used in soups, casseroles and stews.
